Biochemistry week 2

Agavins - I am skeptical as whether the claim that they lower blood glucose levels is correct.  I remember when it was claimed that Agave syrup did this as well only to find that it is akin to corn syrup.  I find it hard to believe that any sweetener that has a carbohydrate constituent to it would lower glucose levels.  It seems like a way to have your cake and eat it too, literally.  I think we need to steer our tastebuds away from concentrated sweeteners in general and toward more of a 5 flavor system of balanced tastebuds and nutrition.

I found the links on cell structures interesting.  The Virus looks like it would be invasive with its tail fibers, vs the human or animal cell which look much more benign.  Bacteria also look like they behave, almost slithery and creaturelike.

  1. I agree with your skepticism Jamie. It seems like the never ending pursuit to find a "healthy" sweetener instead of focusing on a diet that is not filled with sweet foods is a ridiculous idea. I guess it is a reflection of where our society lacks strength in dietary education.

  2. My mom is a Type II diabetic and when Agave nectar first came onto the scene, I was all about it. I turned her on to it as a good substitute for the artificial sweeteners she was using, only to find out YEARS later that it has pretty much the same effect on the body as corn syrup. I was a sucker! I'm so over products that market to the illnesses people have become afflicted with as a result of our modified diets and lifestyles. Instead of coming up with new products that allow people to make the minimal amount of change, I wish we could somehow eradicate the whole system of food marketing schemes and go back to our roots.
